Salmon with Roasted Vegetables
This dish is a great way to incorporate healthy fats and essential vitamins into your diet.
Ingredients:
- 2 salmon fillets (around 6 oz each)
- 1 tablespoon olive oil
- 1/2 teaspoon dried dill
- Salt and freshly ground black pepper, to taste
- 1 cup assorted vegetables (broccoli florets, cherry tomatoes, asparagus spears)
Instructions:
- Preheat oven to 400°F (200°C).
- Toss the vegetables with olive oil, dill, salt, and pepper.
- Arrange the vegetables on a baking sheet. Place the salmon fillets on top of the vegetables.
- Bake for 15-20 minutes, or until the salmon is cooked through and flakes easily with a fork.
