This Kickass Mediterranean Chickpea Salad
Ingredients:
- 1 can (15 oz) chickpeas, rinsed and drained
- 1 cucumber, diced
- 1 tomato, diced
- 1/2 red onion, thinly sliced
- 1/4 cup crumbled feta cheese (optional)
- 1/4 cup chopped fresh parsley
- 2 tablespoons olive oil
- 1 tablespoon lemon juice
- 1/2 teaspoon dried oregano
- Salt and freshly ground black pepper, to taste
Instructions:
- In a large bowl, combine chickpeas, cucumber, tomato, red onion, feta cheese (if using), and parsley.
- In a separate bowl, whisk together olive oil, lemon juice, oregano, salt, and pepper.
