This Kickass Mediterranean Chickpea Salad

Ingredients:

  • 1 can (15 oz) chickpeas, rinsed and drained
  • 1 cucumber, diced
  • 1 tomato, diced
  • 1/2 red onion, thinly sliced
  • 1/4 cup crumbled feta cheese (optional)
  • 1/4 cup chopped fresh parsley
  • 2 tablespoons olive oil
  • 1 tablespoon lemon juice
  • 1/2 teaspoon dried oregano
  • Salt and freshly ground black pepper, to taste

Instructions:

  1. In a large bowl, combine chickpeas, cucumber, tomato, red onion, feta cheese (if using), and parsley.
